Potato chips are a popular snack food. The production process goes through many steps. But what is the process involved in preparing potato chips?

Step1. Raw material selection and inspection:
Sourcing of raw materials: The main raw material for the production of potato chips is potato. The factory will purchase high quality potatoes from certified suppliers.
Quality Inspection: Before potatoes enter the production line, they must undergo strict quality inspection. The inspection items include appearance, size, color, hardness, etc. to ensure that the potatoes are free of mold and pests.

Step2. Washing and peeling
Washing: Potatoes are first washed several times to remove soil, grit and other impurities. This is usually done using a combination of spray and drum washers.
Peeling: After washing, the potatoes are fed into a peeling machine, which removes the skin quickly and efficiently.

Step3. Slicing & Rinsing
Slicing: The peeled potatoes are transferred to a slicing machine, where they are cut into thin, uniform slices. The thickness of the slices is usually between 1 and 2 millimeters, depending on the factory’s requirements for production.
Rinsing: The potato slices are rinsed in a rinsing tank to remove the starch from the surface to prevent sticking during frying.

Step4. Blanching and Dewatering
Blanching: Potato chips are blanched for a short period of time after rinsing, which helps to maintain the color of the chips and remove excess starch.
Dewatering: After blanching, the potato chips are dewatered in a centrifugal dewatering machine to reduce the surface moisture for better frying.

Step5. Deep Frying
Preheating fryer: Before frying, the frying pan needs to be preheated to a certain temperature, usually 170-190 degrees Celsius.
Frying: Potato slices are fed into the frying pan for frying. The frying time is usually 2-3 minutes, which is adjusted according to the thickness of the potato chips and the expected texture.
Degreasing: After frying, the potato chips are degreased through a degreasing machine to remove excess fat and maintain the crispy texture of the chips.

Step6. Seasoning
Spraying Seasoning: After degreasing the chips, they enter the seasoning roller and are evenly sprayed with various seasonings such as salt, pepper, onion powder, etc. according to the needs of different tastes.
Mixing evenly: The seasoning roller keeps rotating so that the seasonings are evenly adhered to the surface of the chips.

Step7. Cooling and Packaging
Cooling: The seasoned potato chips are cooled by cooling conveyor belt to prevent the high temperature potato chips from generating water vapor and affecting the quality during the packing process.
Packing: The cooled chips enter the automatic packing machine and are packed according to the predetermined weight or quantity. Packing bags are usually made of moisture-proof and oxidation-proof materials to ensure the freshness and crispness of the chips.
